Cool Watermelon Slushie (Allergy Friendly)

 
It’s September and it’s still hot. 
 

My name is Sara and I am honored to be a guest on this blog. Let me tell you a little about myself: I live in New England with my amazing husband of almost 4 years. I enjoy cooking, reading, shopping, and enjoying fun times with family and friends. I was raised in a very healthy household with lots of home cooked meals. I don’t have many memories as a child of eating out at restaurants or ordering take out. One of my greatest accomplishments as a child is not finishing an entire package of oreos. I was incredibly jealous of my friends who had pantries full of snacks. Little did I know, the habits and practices my mother instilled me as a child stayed with me through adulthood and I am so incredibly grateful. I am also an essential oil junkie and I am so thankful I have found my “thing” to help me live the natural lifestyle I have always wanted.

 
It is September and I don’t know about you, but it is HOT. School is back in session (at least in the New England), but the weather still screams SUMMER. I grew up in the city of Philadelphia where the summers were brutal and the air conditioning was sparse. Did I mention my family and I lived on the 3rd floor of an apartment complex?! I do love summer. There is just something about the warm weather and longer days of playing outside with friends… My fondest memories as a child are going on a beach trip or going to summer camp and going on a field trip. There would always be good food and of course watermelon. I have a special relationship with watermelon. The kind that brings back a flood of memories of how happy and simple your childhood was. I remember watching intently as my mother cut up a watermelon for a hot summer day. I also remember feeling giddy when my father would bring home a nice big watermelon. He would put it in the refrigerator right away. I could hardly wait until after dinner so he could cut into it! I loved sitting in the living room with my family and having some cold watermelon in the stifling 3rd floor apartment.

A few weeks ago, I decided I wanted to relive those memories of cold watermelon. I could just cut it up and enjoy, but I thought I would be a little creative and come up with something I don’t normally do. It was 80 degrees in my house and I was cursing my non-central air conditioned house. I needed something besides ice water or seltzer to cool me down. Enter my idea for the watermelon slushie. I had watermelon, but I didn’t want to blend it with just ice. That seemed boring. I needed a little something to offset the sweetness…enter lime juice! I blended all the ingredients together and then I had an even better thought: put one drop of lime oil into the slushie! Lime oil is pressed down from the peel and has a slightly different taste than plain old lime juice. I mixed in one drop of lime oil and it definitely gave it a little more depth in flavor…just a little something different and unexpected! 
 
 
I had such joy creating a simple recipe that can be enjoyed for a few more weeks until everything automatically turns “pumpkin spice” overnight. It is gluten free, dairy free, refined sugar free, and can include essential oils if you’d like! This drink reminds me of the anticipation I had as a little girl waiting for that nice cold watermelon. I will definitely be making this until there are no more watermelon in the grocery stores.

Cool Watermelon Slushie
This slushie is the perfect way to cool off during the summer!

Ingredients
  1. 2 cups of watermelon - dice into 1 inch cubes
  2. 1/4 cup of freshly squeezed lime juice - 1 1/2 limes
  3. 1 drop of lime essential oil* (optional)
  4. 1/2 cup of ice
Instructions
  1. Blend all ingredients until smooth.
Notes
  1. *If you think the lime essential oil might overpower the drink, you can always dip a clean toothpick into the essential oil and then dip the toothpick into your slushy for a more subtle flavor.
